Ingredients:
1 cup brown rice
2 cups vegetable broth
Zest and juice of 1 lemon
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
Salt and pepper to taste
Lemon slices for garnish
Instructions:
Rinse the brown rice under cold water until the water runs clear. Drain and set aside.
In a medium saucepan, bring vegetable broth to a boil.
Add the rinsed rice to the saucepan along with lemon zest, lemon juice, olive oil, minced garlic, chopped parsley, chopped dill, salt, and pepper.
Stir well to combine, then reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and the liquid is absorbed.
Remove the saucepan from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and transfer it to a serving dish.
Garnish with lemon slices before serving.
