Ingredients:

Zesty Spinach Stuffed Mushrooms
12 large mushrooms
2 cups fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup breadcrumbs
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
Remove the stems from the mushrooms and chop them finely.
In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushroom stems, sauté until softened.
Add chopped spinach to the skillet and cook until wilted. Remove from heat.
In a bowl, mix together the cooked spinach mixture, feta cheese, breadcrumbs, salt, and pepper.
Stuff each mushroom cap with the spinach mixture, pressing gently to pack it in.
Place stuffed mushrooms on a baking sheet and bake in the preheated oven for 15-20 minutes, or until mushrooms are tender and filling is heated through.
