Flavorful Mutton Kadai Recipe | A Spicy and Aromatic Indian Delicacy

 Ingredients:


500 grams mutton, cut into pieces

2 medium onions, finely sliced

2 tomatoes, chopped

1 tablespoon ginger-garlic paste

2-3 green chilies, slit

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon garam masala

1 teaspoon dried fenugreek leaves (kasuri methi)

Fresh coriander leaves, chopped, for garnishing

Oil or ghee, as needed

Salt, to taste

Instructions:

Heat oil or ghee in a kadai or a heavy-bottomed pan. Add cumin seeds and let them splutter.

Add the sliced onions and sauté until they turn golden brown.

Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.

Add the mutton pieces to the pan and cook on high heat for a few minutes, stirring occasionally, until the meat is browned on all sides.

Reduce the heat to low, cover the pan, and let the mutton cook in its own juices for about 20-25 minutes, or until it's tender. You can add a little water if necessary.

Once the mutton is cooked, increase the heat to medium and add the slit green chilies and garam masala. Stir well.

Crush the dried fenugreek leaves (kasuri methi) between your palms and add them to the dish for a distinctive flavor.

Cook the mutton for a few more minutes until the gravy thickens and coats the meat.

Garnish with chopped fresh coriander leaves.

Serve the delicious Mutton Kadai with naan, roti, or steamed rice.
