 Ingredients:


4 cups spinach leaves, washed and trimmed

2 cups cabbage, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter (optional)

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

Instructions:


Heat a large skillet over medium heat and add the olive oil. If using butter, add it as well.

Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant.

Add the sliced cabbage to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the cabbage begins to soften.

Start adding the spinach to the skillet in batches. As the spinach cooks down, you'll be able to add more.

Sauté the spinach and cabbage mixture until the spinach is wilted and the cabbage is tender, about 5-7 minutes.

Season with salt and black pepper to taste. Remember that the cabbage and spinach will cook down, so be careful not to over-salt.

Once everything is cooked and seasoned, remove the skillet from the heat.

Serve the sautéed spinach and cabbage with a squeeze of fresh lemon juice over the top.

This dish can be enjoyed as a side dish or served with grains, proteins, or as a topping for rice or quinoa.
