1-2 green chilies (adjust to taste)

1 small garlic clove

1 teaspoon roasted cumin powder

For Tamarind Chutney:

1/2 cup tamarind pulp (soak tamarind in warm water and extract pulp)

1/2 cup dates, pitted and chopped

1/2 cup jaggery or brown sugar

1 teaspoon roasted cumin powder

1/2 teaspoon red chili powder

Salt to taste

Instructions:

Prepare the Green Chutney:

Blend all the green chutney ingredients in a blender until smooth. Adjust the seasoning and spice level to your taste. Set aside.

Prepare the Tamarind Chutney:

Combine all the tamarind chutney ingredients in a saucepan.

Heat over medium-low heat and stir until the jaggery or sugar dissolves completely.

Simmer for a few minutes until the chutney thickens slightly. Remove from heat and let it cool. The chutney will continue to thicken as it cools.

Assemble the Samosa Chaat:

Take the samosas and crumble them into bite-sized pieces.

In a large serving bowl or individual plates, arrange the crumbled samosas.

Add diced boiled potatoes, boiled chickpeas, chopped onions, and chopped tomatoes on top of the samosas.

Add Chutneys:

Drizzle green chutney and tamarind chutney over the samosa and vegetable mixture according to your taste.

Yogurt Layer:

Spoon plain yogurt over the chaat.

Seasonings:

Sprinkle chaat masala, roasted cumin powder, red chili powder or chopped green chilies (if desired), and salt over the top.

Garnish:

Finish by garnishing with chopped fresh coriander leaves (cilantro) and a generous amount of sev on top.

Serve:

Serve immediately, allowing everyone to mix and enjoy the delightful combination of flavors and textures.

Samosa chaat is a delicious and satisfying dish that's perfect as a snack or appetizer. You can customize it by adding other toppings like pomegranate seeds, grated carrots, or even a dollop of whipped cream for extra richness.
