 Ingredients:


For the Fritter Batter:


1 cup chickpea flour (besan)

1/2 teaspoon red chili powder (adjust to taste)

1/2 teaspoon turmeric powder

1/2 teaspoon cumin seeds

1/2 teaspoon garam masala (optional)

Salt to taste

Water (approximately 1/2 to 3/4 cup) to make a thick batter

Oil for frying

For the Filling (Choose one or a combination):


2 cups thinly sliced vegetables (e.g., onions, potatoes, zucchini, eggplant, spinach leaves, or mixed vegetables)

1 cup fresh herbs (e.g., cilantro, mint, or parsley), finely chopped (optional)

1-2 green chilies, finely chopped (adjust to taste)

1 small onion, finely chopped (optional)

1/2 cup corn kernels (optional)

1/2 cup crumbled paneer or grated cheese (optional)

1/2 cup cooked and shredded chicken or shrimp (optional)

Instructions:


Prepare the Filling:


Choose your preferred filling ingredients and prepare them accordingly. You can use a combination of vegetables, herbs, and spices for more flavor.

Make the Fritter Batter:

In a mixing bowl, combine the chickpea flour, red chili powder, turmeric powder, cumin seeds, garam masala (if using), and salt.

Gradually add water to the dry ingredients while whisking. Continue to add water until you have a smooth, thick batter that coats the back of a spoon. The batter should not be too runny.

Combine Batter and Filling:

Add the prepared filling ingredients to the batter and mix well to coat them evenly.

Heat Oil for Frying:

In a deep frying pan or a deep fryer, heat enough oil for deep frying. The oil should be hot but not smoking. You can test the oil's readiness by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Fritters:

Carefully drop spoonfuls of the batter-filling mixture into the hot oil. You can shape them into rounds or irregular shapes.

Fry the fritters in batches, making sure not to overcrowd the pan. This will ensure even cooking and prevent them from sticking together.

Fry the fritters until they turn golden brown and crispy, which should take about 3-4 minutes per side.

Drain and Serve:

Use a slotted spoon to remove the fritters from the hot oil and place them on a plate lined with paper towels to drain any excess oil.
