Ingredients:
2-3 pieces of salted fish (asian)
2 tablespoons cooking oil
1 medium-sized onion, sliced
3 cloves garlic, minced
1 thumb-sized ginger, sliced thinly
2-3 pieces green chili peppers (siling pansigang), optional
1 cup vinegar (sukang puti)
1 cup water
2 tablespoons soy sauce
1 teaspoon peppercorns
1-2 pieces bay leaves
1-2 pieces eggplants, sliced into rounds (optional)
1-2 pieces bitter gourd (ampalaya), sliced (optional)
Salt and pepper to taste

Instructions:
Start by preparing the salted fish (asin). Rinse it under cold running water to remove some of the excess salt. You can soak it in water for about 30 minutes if it's too salty, then drain. After soaking, taste a small piece to check for saltiness. If it's still too salty, you can repeat the soaking process until it's at your desired level of saltiness. Once done, set the salted fish aside.
In a large skillet or deep pan, heat the cooking oil over medium heat. Add the sliced onions and sauté until they become translucent.
Add the minced garlic and sliced ginger to the pan. Sauté for a few more minutes until fragrant.
If you like a bit of heat, you can add the green chili peppers at this point.
Carefully add the vinegar to the pan. Let it simmer for a few minutes to reduce its acidity.
Pour in the water and soy sauce, then add the peppercorns and bay leaves. Allow the mixture to simmer for another 5-10 minutes to combine the flavors.
Gently place the salted fish into the pan. If you're using eggplants and bitter gourd, add them now as well.
Cover the pan and simmer the mixture over low to medium heat for about 15-20 minutes or until the fish is fully cooked and the vegetables are tender. Stir occasionally, but be gentle to avoid breaking the fish into small pieces.
Taste the sauce and adjust the seasoning with salt and pepper if needed. The sauce should have a good balance of sweet and sour flavors.
Serve the Paksiw na Isda hot with steamed rice. Enjoy your delicious Filipino salted fish stew!
