Ingredients:
2 cups basmati rice, soaked for 30 minutes and drained
Assorted vegetables (like carrots, peas, cauliflower, potatoes), chopped
1 onion, thinly sliced
2 tomatoes, chopped
3-4 cloves garlic, minced
1-inch ginger, grated
1/2 cup plain yogurt
2 tablespoons biryani masala or garam masala
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1/2 cup chopped mint leaves
1/2 cup chopped coriander leaves
4 cups water
3 tablespoons ghee or oil
Salt to taste

Instructions:
Heat ghee/oil in a large pan or pot. Add sliced onions and sauté until golden brown. Remove half of the onions for garnish.
Add minced garlic and grated ginger, sauté for a minute. Add chopped tomatoes and cook until they soften.
Stir in biryani/garam masala, turmeric powder, red chili powder, and salt. Cook the spices for a couple of minutes.
Add assorted vegetables, chopped mint leaves, and chopped coriander leaves. Mix well.
In a separate pot, bring water to a boil. Add soaked and drained rice. Cook until the rice is 70-80% done. Drain the rice and keep aside.
In the pan with the vegetable mixture, layer half of the partially cooked rice over the vegetables.
Spread half of the fried onions that were kept for garnish.
Repeat with another layer of rice and fried onions.
Cover the pan tightly with a lid and cook on low heat for 15-20 minutes until the flavors meld together and the rice is fully cooked.
Fluff the biryani gently with a fork and serve hot with raita (yogurt sauce) or your favorite side dish.
