Ingredients:
2 cups whole wheat flour
2 cups fresh spinach leaves, blanched and chopped
1 green chili, finely chopped
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
Salt to taste
Ghee or oil for frying
Instructions:
In a mixing bowl, combine whole wheat flour, chopped spinach leaves, chopped green chili, cumin seeds, turmeric powder, and salt.
Knead the mixture into a smooth dough using water as needed.
Divide the dough into small portions and roll each portion into a ball.
Roll out each ball into a small circle. Place a spoonful of the spinach mixture in the center and fold the edges to seal the stuffing.
Roll out the stuffed ball into a flatbread (paratha).
Heat a griddle or skillet over medium heat. Place the rolled paratha on the griddle and cook until golden brown spots appear on both sides, brushing with ghee or oil as needed.
Repeat the process with the remaining dough and spinach mixture.
Serve hot with yogurt or your favorite curry.
