Ingredients:
1 cup jasmine rice
1 cup coconut milk
1 cup water
Zest and juice of 1 lime
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons shredded coconut, toasted
Fresh cilantro leaves for garnish
Instructions:
Rinse jasmine rice under cold water until the water runs clear. Drain and set aside.
In a medium saucepan, combine coconut milk, water, lime zest, lime juice, sugar, and salt. Stir well to combine.
Add the rinsed rice to the saucepan and bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Remove the saucepan from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and transfer it to a serving dish.
Sprinkle toasted shredded coconut over the rice and garnish with fresh cilantro leaves before serving.
