Ingredients for Halwa - 1 cup semolina (sooji)
- 1/2 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water
- 1/4 teaspoon cardamom powder
- A handful of raisins
- A handful of chopped nuts (almonds, cashews, pistachios)
Instructions for Halwa:
Heat ghee in a pan over medium heat.
Add semolina to the pan and roast it until it turns golden brown and aromatic, stirring continuously to prevent burning.
In a separate saucepan, combine water and sugar, and bring it to a boil until the sugar dissolves completely.
Slowly pour the sugar syrup into the roasted semolina while stirring continuously to avoid lumps.
Cook the mixture until it thickens and the semolina absorbs the syrup completely.
Add cardamom powder, raisins, and chopped nuts. Mix well.
Remove the halwa from heat and set it aside.
Ingredients for Puri (Fried Bread):
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- Water for kneading
- Oil for deep frying
Instructions for Puri:
In a mixing bowl, combine whole wheat flour and salt.
Gradually add water and knead to form a smooth and stiff dough.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Divide the dough into small balls, roughly the size of a lemon.
Roll out each ball into a small circle, about 3-4 inches in diameter.
Heat oil in a deep frying pan over medium-high heat.
Carefully slide one rolled-out dough circle into the hot oil and fry until it puffs up and turns golden brown on both sides.
Remove the puri from the oil and drain excess oil on paper towels.
Repeat the process with the remaining dough balls.
Serving:
Serve the hot halwa with freshly fried puris. Enjoy your delicious halwa puri with a side of chana masala (chickpea curry) or aloo bhaji (potato curry) for a complete meal.
