Shalgam ki Sabzi (Indian-Style Turnip Curry)

 Ingredients:

  • 4 medium-sized turnips, peeled and chopped
  • 2 tablespoons oil (mustard oil or any cooking oil of your choice)
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit lengthwise
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare Turnips: Peel the turnips and chop them into cubes or small pieces. Rinse them well and set aside.

  2. Saute Aromatics: Heat oil in a pan over medium heat. Add cumin seeds and let them crackle. Then, add chopped onions and sauté until they turn golden brown.

  3. Add Spices: Add ginger-garlic paste to the pan and sauté for a minute until the raw aroma disappears. Then, add turmeric powder, coriander powder, red chili powder, and garam masala powder. Stir well to combine.

  4. Cook Turnips: Add chopped tomatoes and green chilies to the pan. Cook until tomatoes are soft and oil starts separating from the masala. Then, add chopped turnips and mix well to coat them with the masala.

  5. Simmer: Add salt according to taste and a splash of water to help the turnips cook. Cover the pan and let the curry simmer on low heat until the turnips are tender. Stir occasionally to prevent sticking and ensure even cooking.

  6. Finish: Once the turnips are cooked through and the curry reaches your desired consistency, garnish with fresh coriander leaves.

  7. Serve: Serve hot with roti, naan, or rice. Enjoy your delicious Shalgam ki Sabzi!
