Ingredients:

Spinach and Feta Stuffed Chicken
4 boneless, skinless chicken breasts
2 cups fresh spinach leaves
1/2 cup crumbled feta cheese
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Toothpicks or kitchen twine for securing
Instructions:
Preheat your oven to 375°F (190°C).
Using a sharp knife, cut a pocket into the side of each chicken breast without cutting all the way through.
In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Add fresh spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
In a bowl, mix together the wilted spinach, crumbled feta cheese, dried oregano, salt, and pepper.
Stuff each chicken breast with the spinach and feta mixture, then secure the openings with toothpicks or tie with kitchen twine.
Place stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until chicken is cooked through and juices run clear.
