Authentic Bhindi Masala Recipe | How to Make Flavorful Spiced Okra Dish

Ingredients:


1 pound (about 450g) okra (lady's finger), washed, dried, and cut into 1-inch pieces

2 tablespoons oil (vegetable, canola, or sunflower)

1 teaspoon cumin seeds

1 large onion, finely chopped

2-3 medium tomatoes, chopped

1 tablespoon ginger-garlic paste

1 teaspoon ground coriander

1/2 teaspoon ground turmeric

1/2 teaspoon red chili powder (adjust to taste)

1 teaspoon garam masala

Salt, to taste

Fresh cilantro leaves, chopped, for garnish

Bhindi Masala (Okra in Spiced Tomato Gravy)

Instructions:


Prepare the Okra:

Wash the okra and pat them dry completely. Trim the ends and cut the okra into approximately 1-inch pieces. Make sure they are completely dry to minimize the sliminess.

Sauté the Okra:

Heat 1 tablespoon of oil in a pan over medium heat. Add the cut okra and sauté for about 5-7 minutes until they are tender and slightly browned. Remove the okra from the pan and set them aside.

Prepare the Tomato Gravy:

In the same pan, add the remaining 1 tablespoon of oil. Add cumin seeds and let them sizzle.

Add the chopped onions and sauté until they become golden brown.

Add Spices and Tomatoes:

Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add the chopped tomatoes, ground coriander, turmeric, red chili powder, and salt. Cook until the tomatoes are soft and the oil begins to separate from the mixture.

Blend the Gravy:

Allow the tomato mixture to cool slightly and then blend it into a smooth paste using a blender or food processor. You can add a little water if needed to achieve the desired consistency.

Cook the Gravy:

Return the blended mixture to the pan and cook it for a few minutes until the raw smell of tomatoes disappears and the gravy thickens.

Add Okra and Spices:

Add the sautéed okra to the gravy and mix well. Cook for a few more minutes to allow the flavors to meld together.

Add Garam Masala:

Sprinkle garam masala over the okra and gravy, and give it a final stir.

Garnish and Serve:

Remove from heat and garnish with chopped cilantro leaves.

Serve:

Bhindi Masala is best enjoyed with hot roti (Indian bread) or steamed rice.

Note: Adjust the spiciness and seasoning levels according to your preference. Bhindi Masala can also be made in various regional styles by incorporating regional spices and flavors.
