Carrot Jam for all of my Family

Instructions:

Grate the carrots: Peel and grate the carrots using a fine grater. You can also use a food processor to make this process quicker.

Cook the carrots: In a large saucepan, combine the grated carrots, sugar, lemon juice, and water. If you want to add cinnamon for flavor, do so at this stage.

Cook the mixture: Place the saucepan over medium heat and stir the mixture well. Bring it to a boil.

Simmer: Once it reaches a boil, reduce the heat to low and let the mixture simmer. Stir occasionally to prevent sticking. Simmer for about 45 minutes to 1 hour, or until the carrots are soft and the mixture thickens to a jam-like consistency.

Test for doneness: To check if the jam is ready, place a small amount on a cold plate. If it forms a gel-like consistency as it cools, it's done. If not, continue simmering and retest after a few more minutes.

Store: Once the jam is ready, remove it from the heat and let it cool slightly. Then, transfer it to clean, sterilized jars while it's still warm. Seal the jars and store them in a cool, dark place. The jam should keep for several months if properly sealed.

Carrot jam can be enjoyed on toast, as a filling for pastries, or as a condiment with various dishes. Feel free to adjust the sweetness and flavorings to suit your taste preferences. Enjoy!
