Ingredients:
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 carrots, diced
1 zucchini, diced
2 (14 oz) cans of diced tomatoes
2 (14 oz) cans of kidney beans, drained and rinsed
1 cup vegetable broth
2 tablespoons chili powder
1 teaspoon cumin
Salt and pepper to taste

Instructions
Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.
Add bell peppers, carrots, and zucchini. Cook for 5 minutes, stirring occasionally.
Stir in diced tomatoes, kidney beans, vegetable broth, chili powder, cumin, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
Serve hot, garnished with shredded cheese, sour cream, and chopped green onions if desired.
