| Baked Mediterranean Eggs Recipe |
4 large eggs
1 small onion, finely chopped
1 red bell pepper, diced
2 cloves of garlic, minced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F (190°C).
Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and sauté until translucent.
Add the diced red bell pepper and minced garlic to the skillet. Cook for another 2-3 minutes until the pepper softens.
Stir in the cherry tomatoes and cook for an additional 2 minutes, until they start to release their juices.
Make four small wells in the vegetable mixture and crack an egg into each well.
Sprinkle the crumbled feta cheese evenly over the skillet.
Season with salt and pepper to taste and transfer the skillet to the preheated oven.
Bake for about 12-15 minutes or until the eggs are cooked to your desired level of doneness.
Remove from the oven and garnish with fresh parsley.
Serve the baked Mediterranean eggs hot with crusty bread for a hearty and flavorful breakfast or brunch.
