*   1 cup red lentils, rinsed

*   1 onion, diced

*   3 cloves of garlic, minced

*   1 tablespoon curry powder

*   1 can (14 oz) coconut milk

*   4 cups vegetable broth

*   1 carrot, sliced

*   1 red bell pepper, diced

*   1 tablespoon olive oil

*   Salt and pepper to taste

*   Fresh cilantro, chopped (for garnish)

Instructions:

1.  Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.

2.  Stir in the curry powder and cook for about 1 minute to release its flavors.

3.  Add the rinsed red lentils, coconut milk, vegetable broth, sliced carrot, and diced red bell pepper to the pot.

4.  Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the lentils are tender.

5.  Season with salt and pepper to taste.

6.  Serve the coconut curry lentil soup hot, garnished with fresh cilantro. Enjoy with some naan bread or rice on the side.
