| Grilled Halloumi Salad Recipe |
* 1 block (8 oz) halloumi cheese, sliced
* 4 cups mixed salad greens
* 1 cup cherry tomatoes, halved
* 1/2 cucumber, sliced
* 1/4 red onion, thinly sliced
* 2 tablespoons fresh mint leaves, chopped
* 2 tablespoons fresh lemon juice
* 2 tablespoons extra virgin olive oil
* Salt and pepper to taste
Instructions:
1. Preheat a grill or grill pan over medium-high heat.
2. Place the halloumi cheese slices on the grill and cook for about 2-3 minutes on each side, or until grill marks appear and the cheese softens.
3. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, thinly sliced red onion, and chopped mint leaves.
4. In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, salt, and pepper to make the dressing.
5. Drizzle the dressing over the salad and toss to coat all the ingredients evenly.
6. Arrange the grilled halloumi slices on top of the salad.
7. Serve the grilled halloumi salad as a refreshing and satisfying main course or as a side dish to accompany grilled meats or seafood.
