| Vegan Chickpea Curry |
2 cups cooked chickpeas
1 onion, finely chopped
2 tomatoes, chopped
3 cloves garlic, minced
1-inch piece of ginger, grated
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon red chili powder
Salt to taste
Fresh coriander leaves for garnish
Cooked rice or naan for serving
Instructions:
Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions, garlic, and ginger. Saute until onions turn golden brown.
Add chopped tomatoes and cook until they soften.
Add turmeric powder, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for a minute.
Add cooked chickpeas and stir to coat them with the spices.
Add water as needed to adjust the consistency of the curry. Cover and simmer for 10-15 minutes.
Garnish with fresh coriander leaves and serve hot with rice or naan.
