Ingredients:
500 grams okra (bhindi), chopped
2 onions, finely sliced
2 tomatoes, pureed
3 cloves garlic, minced
1-inch ginger, grated
2 green chilies, slit
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon coriander powder
Salt to taste
2 tablespoons oil
Fresh cilantro leaves for garnishing
Instructions:
Heat oil in a pan and add cumin seeds and mustard seeds. Once they crackle, add sliced onions, minced garlic, and grated ginger. Sauté until onions turn golden brown.
Add tomato puree, turmeric powder, coriander powder, garam masala, and salt. Cook until the oil separates from the masala.
Now add chopped okra and slit green chilies. Mix well, cover, and cook for 15-20 minutes until okra is cooked through.
Garnish with fresh cilantro leaves before serving
