Crispy Onion Bhajis | Spiced Onion Fritters

Ingredients:

2 large onions, thinly sliced

1 cup chickpea flour (besan)

2 tablespoons rice flour

1 teaspoon cumin seeds

1 teaspoon coriander seeds, crushed

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder

1/4 cup chopped cilantro

Salt to taste

Water (as needed)

Oil for deep frying

Instructions:

In a large bowl, combine sliced onions, chickpea flour, rice flour, cumin seeds, crushed coriander seeds, turmeric powder, chili powder, chopped cilantro, and salt.

Gradually add water and mix until the onions are well coated and the mixture forms a thick batter.

Heat oil in a deep frying pan or wok over medium heat.

Drop spoonfuls of the onion batter into the hot oil, frying in batches. Flatten slightly with the back of the spoon.

Fry until golden brown and crispy, about 4-5 minutes per side.

Remove from the oil using a slotted spoon and drain on paper towels.

Serve hot with mint chutney or tamarind sauce.
