Ingredients:
4 cups pitted and halved cherries
2 cups granulated sugar
1 vanilla bean, split and scraped (or 2 teaspoons vanilla extract)
Instructions:
In a heavy-bottomed pot, combine the cherries, sugar, and vanilla bean seeds (or vanilla extract).
Cook over medium heat, stirring frequently, until the cherries release their juices and the mixture thickens, about 20-25 minutes.
Remove from heat and let cool slightly.
Remove the vanilla bean pod, if using.
Transfer the jam into sterilized jars and seal tightly. Allow to cool completely before storing in the refrigerator.
