Ingredients:
2 cups peas
1 cucumber, diced
1 bell pepper, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Fresh herbs (optional)
Method:
Steam the peas until tender, then rinse under cold water and drain.
In a large bowl, combine peas, cucumber, bell pepper, cherry tomatoes, and red onion.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Garnish with fresh herbs if desired and serve chilled
