Ingredients:
2 cups mixed vegetables (such as carrots, potatoes, peas, cauliflower), chopped
1 onion, finely chopped
2 tomatoes, pureed
1/2 cup coconut milk
2 tablespoons ghee or oil
1 teaspoon ginger-garlic paste
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon garam masala
Salt to taste
Chopped coriander leaves for garnish
Instructions:
Heat ghee or oil in a pan and fry onions until translucent.
Add ginger-garlic paste and sauté until fragrant.
Add mixed vegetables and cook until slightly tender.
Stir in tomato puree, ground coriander, cumin, turmeric, red chili powder, and salt. Mix well.
Pour in coconut milk and simmer until vegetables are fully cooked and the sauce thickens.
Sprinkle garam masala and garnish with chopped coriander leaves before serving.
