Ingredients:
Vegetable Samosas | Crispy Pak india Pockets
2 cups all-purpose flour
1/4 cup vegetable oil
1/2 teaspoon salt
Water (as needed)
2 cups boiled and mashed potatoes
1 cup mixed vegetables (peas, carrots, corn)
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
Salt to taste
Oil for frying
Instructions:
In a large bowl, combine flour, vegetable oil, and salt. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
Heat oil in a pan. Add onions, garlic, and ginger. Sauté until onions are translucent.
Add mixed vegetables and spices. Cook until vegetables are tender.
Add mashed potatoes and mix well. Adjust seasoning if needed. Let the mixture cool.
Divide the dough into small balls. Roll each ball into a thin circle.
Cut each circle in half to form semi-circles. Fold each semi-circle into a cone shape and seal the edges with water.
Fill each cone with the vegetable filling. Seal the top edges to form a triangular shape.
Heat oil for frying. Fry samosas until golden brown and crispy.
Drain excess oil on paper towels. Serve hot with mint chutney or tamarind sauce.
