Ingredients:
1 can (15 oz) black beans, drained and rinsed
1/2 cup cooked quinoa
1/4 cup finely chopped onion
1/4 cup breadcrumbs
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
1 egg
4 hamburger buns
Toppings (lettuce, tomato, onion, avocado, cheese, condiments of choice)
Instructions:
In a large bowl, mash the black beans until mostly smooth.
Add cooked quinoa, chopped onion, breadcrumbs, cumin, chili powder, salt, pepper, and egg to the mashed beans. Mix until well combined.
Divide the mixture into 4 equal portions and shape them into patties.
Preheat grill or skillet to medium-high heat.
Cook the patties for about 4-5 minutes per side, or until heated through and golden brown.
Toast the hamburger buns on the grill or skillet for about 1-2 minutes.
Assemble the burgers by placing the cooked patties on the bottom halves of the buns, then add desired toppings and condiments. Top with the other half of the bun and serve.
